Description
Gellan gum is a straight chain polymer that comprises repeating units of glucose, rhamnose and glucuronic acids.
The native form (High Acyl form) has two acyl substituents, actetate and glycerate, that are located on the glucose residues.
On average, there is one glycerate per repeat unit and one acetate every two repeat units when both are located on the same glucose residue.
Deacylated gellan gum (Low Acyl form) is produced industrially from HA gellan gum using an alkaline treatment to remove the acyl groups.
